Depends a lot on coverage area honestly, front bumper and hood alone can realistically be done properly in a day, but full vehicle coverage rushed into the same timeframe is where corners tend to get cut on prep and finishing work.

Had partial coverage done same day and it's held up fine over a year later, no lifting or bubbling issues. But that was a smaller job scope, I'd be more skeptical of a shop promising full coverage same day since proper edge work on all those panels genuinely takes time to do right.

Went with partial front-end coverage specifically because of my tight schedule too, same day worked out fine for that scope and looks seamless months later. If you need full coverage though, might be worth blocking out more time rather than pushing for same day just for convenience.
